A pantry is a very well defined closet: it is always meant to store food and certain dishes and appliances that do not fit in the kitchen cabinets.
But just like all other closets in your house, it is a part of a whole, and as such should be designed once you have done some thinking about where various household items need to be. It has a relationship to all other closets, and in particular to missing closets. This is why it may need to accommodate wine scallops, paper goods, plastic silverware, mops and brooms, aprons, and even your recycling.
When there is not enough room for a walk in pantry, you may want to consider a kitchen pantry cabinet. Depending on the amount of space you have, it may be wide and shallow or narrow and deep. These features will determine what shelves you can best install in order to maximize the efficiency of your pantry storage.
In a walk in pantry an important feature is to be found in its corners. In a kitchen, lower cabinet corners are often "Lazy Susans" and upper cabinets are corner shelves behind doors. In a pantry you already have a pantry door, and unlike most walk in closet doors, pantry doors are usually kept closed. Therefore open pantry shelving is the norm.
Even though pantries are centuries old, the art of designing a modern pantry is quite recent. Here too, the home organizing industry has left a very noticeable mark in how efficiently and practically it organizes space and supports you in your daily activities.
While old pantries just had non-adjustable shelves, nowadays pantry design is much more sophisticated. Custom designed and built pantries contain exactly all you need and you can change shelf heights as required.
One last thought about pantries: In the old days, before refrigeration became commonplace, pantries were located in a cool place, with an outside wall or half underground. This hardly happens anymore, but if you want to create a space to store food for an emergency, you may want to think down those lines.
